Dhaba Style Egg Curry 🍳 Ingredients * 4 boiled eggs * 3 medium-sized onions, sliced * 3 tomatoes, sliced * 4 green chillies * 1 bunch fresh coriander, chopped * 1 tbsp ginger-garlic paste * 1 tsp cumin seeds * 1 small cinnamon stick * 2–3 green cardamoms * 1–2 bay leaves * ½ tsp turmeric powder * 1 tsp red chilli powder * 1 tsp coriander powder * 1 tsp Kashmiri red chilli powder * ½ tsp garam masala * Salt, to taste * 1 glass water, or as required * Oil, as required Method 1. Heat a little oil in a pan. Add the sliced onions and sauté until they turn soft and slightly pinkish. Add the whole green chillies and sauté for another minute. 2. Add the sliced tomatoes, chopped fresh coriander and salt. Cook everything on medium flame until the tomatoes and onions become soft. 3. Let the mixture cool completely, then transfer it to a blender and blend into a smooth paste. Keep it aside. 4. Boil 4 eggs, peel them and make a few shallow cuts on them. Heat some oil in a pan, add a little turmeric powder and Kashmiri red chilli powder, then add the boiled eggs and fry them until lightly golden. Keep them aside. 5. Heat some oil in a kadhai. Add cumin seeds, cinnamon, green cardamoms and bay leaves. Let the whole spices crackle. 6. Add ginger-garlic paste and sauté until the raw smell disappears. Then add red chilli powder, turmeric powder, coriander powder, Kashmiri red chilli powder and garam masala. Add a little water if required so the spices don’t burn. 7. Add the prepared onion-tomato paste and salt. Mix everything well and cook on medium flame until the masala is nicely roasted and the oil starts releasing from the sides. 8. Add the fried boiled eggs and 1 glass of water, or adjust the quantity according to your preferred gravy consistency. Cover and cook until the gravy is well cooked and the oil starts releasing. 9.
