Pumpkin & Feta Spread on Crispy Toast 🍂 Ingredients: 200–250 g pumpkin 150–200 g feta cheese 1 tbsp Greek yogurt Salt and black pepper, to taste Olive oil Dried thyme A pinch of nutmeg 1 garlic clove Honey Walnuts Instructions: Peel the pumpkin, cut it into small cubes, and place them in a baking dish. Season with salt and pepper, add a pinch of nutmeg and dried thyme, drizzle with olive oil, and bake at 200°C (400°F) for 20–30 minutes, until tender. Toast the bread in butter on both sides until golden and crispy. In a blender, combine the feta, cooled roasted pumpkin, Greek yogurt, garlic, and a little honey. Blend until smooth. Spread the mixture over the toasted bread. Top with the remaining feta, a few pieces of roasted pumpkin, and crushed walnuts. Drizzle with a little honey if desired. Enjoy!
