The first 3 hours are all about building flavour and bark! Every hour I set an alarm, and after the first hour I spritz the ribs with a mix of apple juice and apple cider vinegar to help keep them moist. After 3 hours, it's time to wrap them with butter, brown sugar and a splash of apple juice before they go back on the smoker.
