Prepare the Turkey Remove the neck and giblets. Pat the turkey completely dry and remove any pop-up thermometer. 2. Apply the Binder Coat the entire turkey generously with mayonnaise, including underneath the wings and around the legs. 3. Season Apply Duce’s Wild Poultry Rub all over the turkey, including inside the cavity. 4. Add Aromatics Place the quartered onion and garlic cloves inside the cavity. 5. Tuck and Tie Tuck the wings underneath the turkey and tie the legs together with butcher’s twine. 6. Smoke Preheat your smoker to 250°F. Add hickory wood and place the turkey breast-side up. Smoke until the thickest part of the breast reaches 165°F, checking the temperature with a reliable digital thermometer. Cooking time will vary, but plan for approximately 4–5 hours. 7. Rest and Serve Let the turkey rest for 20 minutes before carving. Slice, serve, and enjoy!
