BISCUIT AND ALMOND LAYER * 4 cocoa biscuits, 21.6g total (0.76 oz), lightly wetted * 5g roasted almonds (0.18 oz; about 4 almonds) Place the biscuits over the base. Arrange the almonds along one short edge of the rectangle. Freeze for 15 minutes only. Make the topping toward the end of those 15 minutes. CHOCOLATE TOPPING * 60g milk chocolate (2.1 oz; about ⅓ cup chopped) * 3g coconut oil (0.1 oz; a scant ¾ tsp) * 11–12ml water maximum (about 2¼–2½ tsp) Melt the chocolate and coconut oil together. Add the water and mix extremely well. ⚠️ MOVE FAST: Spread and level the topping immediately because it thickens very quickly. Do not leave the dish in the freezer longer than 15 minutes. If the surface freezes, the chocolate will set on contact and you’ve got basically no chance of spreading it evenly.
