Editor's note

This one-pot chili leverages taco seasoning and beans for a quick, high-protein comfort dish that works well as leftovers—directly tapping into the North American trend of easy, protein-forward weeknight cooking. The minimal prep and thickening tricks make it applicable to busy service settings.

one pot EASY chili 🍁 quick comfort food and makes the best leftovers! Ingredients: 1 tbsp olive oil 1 red onion, finely chopped 1½ lb ground turkey or ground beef 1 packet taco seasoning salt & black pepper 4-5 cloves garlic, minced 2 tbsp tomato paste 1 (28 oz) can chopped tomatoes (I love fire-roasted but regular works too!) 1 (15 oz) can black beans, rinsed & drained 1 (15 oz) can kidney beans, rinsed & drained 1½ cups chicken or beef broth Toppings: shredded cheese (I use goat’s milk cheddar), green onions, sour cream or yogurt Optional: roasted butternut squash or sweet potato (only if you already have it prepped!) Instructions: Heat olive oil in a large pot over medium-high. Sauté onion until softened (about 4 min). Add ground turkey and cook until golden — no need to fully cook through yet. Season with salt and pepper. Stir in garlic and tomato paste; cook 2 min until fragrant. Add taco seasoning, chopped tomatoes, both beans, and broth. Stir well. Simmer until thickened (about 30 min). If you’re short on time, you can add a slurry of arrowroot powder to thicken faster. Top with cheese, green onions, and a dollop of sour cream or yogurt — and that’s it. Cozy, healthy comfort food in one pot. 🥘 #healthyrecipes #soupseason #chilirecipe #highprotein #easydinnerideas
