Editor's note
French onion soup meets pasta in a single-pan dish that's been trending on TikTok for years. The technique of brown butter before caramelizing onions draws attention at home, and the appeal lies in minimal cleanup despite the long onion cooking time. Good for prep efficiency when planning several plates.

No added sugar, real ingredients, and it actually helps your body absorb water better. One-pot French onion pasta — bascally French onion soup pasta — all made in one pan! This is my version of the viral onion pasta many of you may remember from a couple years ago — not to be confused with my super delicious french onion mac and cheese. It’s a viral tiktok sensation! This creamy onion pasta is the perfect pasta recipe for fall. I mean whats not to love about a caramelized onion pasta that also happens to be a one pot recipe, and its a great budget recipe too. I wouldn’t recommend making this gluten-free (sorry), but i have seen some vegan versions! Is this the best one pot pasta I’ve ever made? I’ll let you decide that! Either way, you have to try this pasta. Recipe below! Recipe👇 Ingredients👇 2 tbsp butter 2 tbsp EVOO 3 large yellow onions (thinly sliced) 7 cloves minced garlic 2 tbsp fresh thyme 3/4 cup dry white wine 1/4 cup sherry 2 tbsp flour 5 cups beef bone broth 2 tsp worcestershire 1 lb pasta 1 tsp dijon mustard 1/4 tsp nutmeg 1/4 tsp cayenne 9 oz gruyere (grated, divided) Instructions👇 1. To a large saute pan over medium low heat, add the butter. Cook the butter, stirring constantly, until the butter foams and the milk solids have turned toasty brown. Then turn the heat to medium and add the EVOO and the onions. Season with a big pinch of salt and toss till the onions are coated in the fat. Cook, stirring occasionally, until the onions have shrunk to a fraction of their original mass and the water in the onions has cooked off. As the onions start to brown on the bottom of the pan, add a splash of water to deglaze and stir. Repeat 4-5 times until the onions are caramelized and a beautiful amber color. This process will take around 45 minutes. 2. When the onions are caramelized, add the garlic and thyme and cook 30 seconds. Add both wines to deglaze, then cook until the alcohol smell is gone and the liquid has reduced about 90%. 3. Add the flour and cook for 2-3 minutes to cook the raw flour taste out, then add the bone broth and Worcestershire — season with salt and turn the heat to medium high to bring to a gentle boil. 4. Add the pasta and cook, stirring frequently, till just under al dente 5. Add the dijon, nutmeg, cayenne and 5oz of the Gruyère and stir to melt, then top with remaining Gruyère and broil on low till melty. 6. Serve immediately garnished with more fresh thyme.
