The combination of fresh lemon juice and lemon zest gives this cake a lovely citrus flavour, while the yogurt helps keep it soft and moist. It's a simple lemon cake that's perfect with tea or coffee, for dessert, afternoon tea or whenever you're craving an easy homemade cake. 🍋 🍰 🍋 Soft Lemon Yogurt Cake Ingredients For the Cake Lemon zest – 1 teaspoon Lemon juice – 30ml (2 tablespoons) Salted butter – 110g (½ cup), softened Sugar – 175g (¾ cup + 2 tablespoons) Vegetable oil – 30ml (2 tablespoons) Eggs – 2 Natural yogurt – 80g (⅓ cup) Plain flour – 200g (1⅓ cups) Baking powder – 1½ teaspoons Vanilla extract – 1 teaspoon For the Lemon Glaze Powdered sugar – 80g (⅔ cup) Lemon juice or milk – 2–3 tablespoons Optional Topping Lemon curd, marmalade, or your favourite topping Equipment Measuring cup size: 240ml Baking pan: 20 × 20 cm (8 × 8 inch) Bake in a preheated oven at 170°C (350°F) for 30–35 minutes. Method Make the Lemon Cake First rub the sugar and the lemon zest together. Then add butter and cream together for about 2 minutes, or until light and creamy. I use salted butter for this recipe. If you're using unsalted butter, simply add a small pinch of salt. You can also substitute the butter with margarine or baking spread if preferred. Add the vegetable oil and whisk for 1 minute until well combined. Add the eggs and whisk for about 2 minutes, scraping down the sides of the bowl as needed. Add the natural yogurt and vanilla extract, then whisk for another 1 minute until smooth and creamy. Sift the plain flour and baking powder directly into the bowl. Gently fold the dry ingredients into the batter by hand until almost combined. Pour in the fresh lemon juice and gently fold again until the batter is smooth and evenly combined. Avoid overmixing. Pour the batter into a lined 20 × 20 cm (8 × 8 inch) baking pan and spread it evenly.
