Chop all the vegetables French beans, Napa cabbage, carrot, bell peppers and zucchini. Keep them aside. 2. Heat 1 teaspoon oil in a pan. Add the ginger, garlic and green chilli. Sauté for a few seconds. 3. Add the sliced onion and tomato. You can either chop the tomato or slit it and add it whole. Sauté for 1–2 minutes. 4. Add turmeric, cumin powder, red chilli powder, timur and black pepper. Sauté for another 1–2 minutes. 5. Add the chopped vegetables and light soy sauce. Sauté well for a minute. 6. Pour in about 2 cups of water or vegetable stock. Vegetable stock gives the thukpa a more flavourful broth, but water works perfectly well too. 7. Add the noodles and salt to taste. Cover and cook until the vegetables and noodles are cooked through. 8. Finish with fresh coriander and spring onion. 9. Squeeze some fresh lemon juice just before serving and enjoy hot. #thukpa #souprecipe #healthy
