Editor's note

The spice layering technique is the key insight. By building a tomato-onion base and adding multiple masala spices in stages, the cook develops complex aromatics—a method applicable to restaurant curry preparation. The egg integration also offers practical timing lessons.

Masala Egg Curry 🍳🌶️ Ingredients: * 5–6 boiled eggs * 2–3 onions, pureed * 2 tomatoes, pureed * 1–2 tbsp ginger-garlic paste * 2 tbsp oil * 1 tsp cumin seeds * 1 bay leaf * ¼ tsp turmeric powder (for frying eggs) * ½ tsp Kashmiri red chilli powder (for frying eggs) * ½ tsp red chilli powder * ½ tsp turmeric powder * 1 tsp coriander powder * 1 tsp Kashmiri red chilli powder * ½ tsp garam masala * ½ tsp roasted cumin powder * Salt to taste * 1 cup water * Fresh coriander for garnishing Method: 1. Boil the eggs, peel them and keep aside. 2. Heat oil in a pan, add the boiled eggs, turmeric powder and Kashmiri red chilli powder. Fry until lightly golden and set aside. 3. In a kadhai, heat oil and add cumin seeds and bay leaf. 4. Add the onion puree and cook until golden brown. 5. Add ginger-garlic paste and cook for 1–2 minutes until its raw smell disappears. 6. Add red chilli powder, turmeric powder, coriander powder, Kashmiri red chilli powder, garam masala and roasted cumin powder. Roast well without burning the spices. 7. Add tomato puree and salt. Cook until the oil separates. 8. Add the fried eggs and mix gently. 9. Pour in 1 cup water, cover and cook on medium-high heat for 2–3 minutes. 10. Garnish with fresh coriander and serve hot with rice, roti, paratha or salad. #youtubeshorts #shorts #viral #fyp #trending
