Extra Crispy Chicken Strips 🍗 Chicken 1½ lb chicken breast ¾ cup pickle juice 1 tsp paprika 1 tsp garlic powder 1 tsp onion powder ½ tsp black pepper Coating 1½ cups flour ½ cup cornstarch 1 tsp each paprika, garlic powder & onion powder ½ tsp cayenne, optional 1 tsp salt ½ tsp black pepper ½ tsp baking powder Cold water Oil, for frying Cane’s-Style Sauce ½ cup mayo ¼ cup ketchup 1 tbsp Worcestershire sauce 1 tsp garlic powder ½ tsp black pepper ½ tsp paprika ¼ tsp onion powder Instructions Slice chicken breasts horizontally, then cut into small thin strips. Marinate chicken with pickle juice and seasonings for 1–2 hours. Mix all coating ingredients. Add 3–4 tbsp pickle juice or cold water and rub together to create small flour clumps. Coat chicken in flour, quickly dunk in cold water, then coat again. Press and scrunch the flour onto the chicken for a craggy coating. Fry at 350°F for 3–5 minutes until golden and cooked to 165°F. For extra crunch, rest 5–10 minutes, then fry again at 375°F for 45–60 seconds. Mix all sauce ingredients and serve alongside. Tip: Keep the water dunk super quick and really press the second flour coating onto the chicken for those crispy crinkles.
