Andhra Style Gongura Rice Recipe 🌿🍚 | Traditional Village Style Gongura Rice Learn how to make delicious and authentic Andhra-style Gongura Rice with fresh gongura leaves, roasted spices, peanuts and cashews. This traditional village-style recipe is spicy, flavorful and perfect for a simple homemade meal! ❤️ 🌿 Ingredients & Recipe For Rice: - 1 glass rice - 2½ glasses water Wash the rice 3 times and cook it in a pressure cooker with 2½ glasses of water. Cook until 3 whistles and let the rice cool completely. For Gongura Masala: - 1 tsp chana dal - 1 tsp urad dal - 1 tsp coriander seeds - ½ tsp cumin - 1 tsp fenugreek seeds - Dried red chilies - Fresh gongura leaves - A little salt Dry-roast the chana dal, urad dal, coriander seeds, cumin and fenugreek on low flame. Add dried red chilies and roast them. Let everything cool. In the same pan, add 2–3 tbsp oil and fry the washed gongura leaves well. Let them cool. Add the roasted spices, fried gongura and a little salt to a mixer jar. Grind everything into a smooth paste. For Tempering: - 2–3 tbsp oil - Mustard seeds - Cumin - Chana dal - Urad dal - 2 slit green chilies - Curry leaves - Peanuts - Cashews Heat oil in a kadai and add mustard, cumin, chana dal, urad dal, green chilies and curry leaves. Add peanuts and cashews and roast until golden. Add the prepared gongura masala paste and fry for a few minutes. Then add the cooled rice and salt as needed.
